Chorizo Burrito Bowls ft. Premio Sausage

By the end of the week, I’m always looking for super easy dinner ideas- anyone else? I’ve got a great one for you right here- Chorizo Burrito Bowls ft. @premiofoods Fresh Chorizo! Premio Fresh Chorizo is made with high quality fresh butcher cut meat, no fillers, no preservatives, no MSG, and are gluten free for those with dietary restrictions. It’s a great starting point for so many simple weeknight meals. Chorizo Burrito Bowls Serving Size: 4 Ingredients: •1 package Premio Fresh Chorizo •.5 tbsp Vegetable Oil •1 cup long grain white rice •Kosher Salt •1 can Black Beans •1 can Sliced Black Olives •1 Jalapeño, sliced •1 Lime, cut into wedges •Queso Fresco, crumbled •Guacamole, store-bought or homemade •Pico de Gallo, store-bought or homemade •Sour Cream •Cilantro •Tostadas or Tortilla Chips Directions: 1. Place 2 cups of water in a small sauce pan. Bring to a boil over medium-high heat. 2. Add rice, stir once then cover. Reduce heat to low. Cook for 20 minutes, until all water is absorbed. 3. Remove from heat and fluff with a fork. Cover until ready to use. 4. Use a knife to open sausage casing. Use your hands to break the chorizo into small crumbles. 5. Place a 12 inch skillet over medium-high heat. Heat vegetable oil. 6. Place chorizo in skillet and cook for 5 minutes, or until cooked through. Stir occasionally to brown on all sides. 7. Fill bowl with 1/2 cup of rice, 1/2 cup of chorizo, 1/4 cup of black beans, 1/4 cup of black olives, 1/4 cup of queso fresco, 1/4 cup of guacamole, 1/4 cup of pico de gallo, 1-2 tbsp of sour cream, and a handful of cilantro. Top with jalapeños and tostada or tortilla chips, and squeeze lime wedges over top.
